Pikelets
Ingredients;
1cup Flour
1 teaspoon Baking Powder
¼ teaspoon Salt
1 Egg
½ cup Sugar
¾ cup Milk
Pan or Griddle needs to be a medium heat, to test, butter should melt and then gently bubble without sizzling and burning.
Sift dry ingredients into bowl.
Whisk egg and sugar together until well combined and slightly thickened.
Add egg mixture and milk to flour mixture. Combine really well but do not over mix or pikelets will be tough. I find a metal edged spoon works well for this as it cuts through the flour lumps. I’ve also lightly whisked ingredients together with a very small hand whisk and it’s worked well.
Lightly grease pan if needed with a small amount of butter. If butter browns and burns your pan may be too hot
Drop dessertspoon full amounts onto hot griddle, allow cooking until bubbles have formed and popped then flip over, cook for a minute or so and remove.
